Chicken Enchiladas

I made very yummy chicken enchiladas and wanted to share the recipe. I have no idea where I got this from so I can’t give credit to anyone!

It’s so easy and takes just 10 minutes to prep. Here is what you’ll need:

flour tortillas, 2 cups cheddar cheese, 1 can cream of chicken, 1 16 oz sour cream, 2 cups of chicken. ( I used already cooked deli chicken but you could used canned or even boil your own)

Combine the cream of chicken and the sour cream together. Spread a little bit at the bottom of your baking dish. Take a tortilla, spread cream mixture with a knife, add a few pieces of chicken, then top with cheese. Roll up tortilla into a tight roll and place in the dish. Continue doing this until you are out of room!

DSC_0161 I think I could fit 7-8 tortillas rolled. Top the tortillas with remaining cream mixture. Then finish off the cheese on top of that!

Bake at 350 for 35-40 minutes- Makes 4-5 servings (We always take leftover for lunch the next day)

I don’t have the after picture because I actually made this ahead of time and we are going to have it for dinner tomorrow night! This makes a great freezer meal too. I’ve doubled the recipe before and put one in the freeze for next time.

We add a salad and chips/salsa for a good little meal!

What I like about it is that it’s easy, I can make it ahead of time, and it probably costs $7-$8 with a salad.
