I haven’t posted a recipe in long time so I’m over due! This is one of our favorites. It’s a recipe my mom made when we were growing up and it was liked by all of us (which was rare!). I make the way-easy version. I save myself loads of time and buy pre-made chicken. But yes, if you didn’t uses this you’d have to boil and make your own chicken. (Who wants to do that????) I love the Oscar Meyer deli fresh chicken. These are most of the ingrediants I use but I forgot to add tortilla chips and chili powder to this.
In a casserole dish, spread a spoon full or 2 of the cream of chicken/mushroom combo at the bottom. Coat dish. Tear up 2-3 corn (must be corn!) tortillas and cover the bottom of the dish. Add about 1/2 of chicken on top of tortillas. Pour can of rotel (pre drained a little) on top of chicken. Top with cheddar cheese. Tear 2-3 more tortillas and continue with cream of chicken, chicken until it’s all gone. On the very top for an extra crunch; take a few handf ulls of tortilla chips, crunch in your hands and add to the top. Finish with more cheddar cheese and add chili powder on the very top. It should look something like this:
Bake at 350 for about 25-30 minutes

Add this with a little side salad and you’re good to go. We always have so much left over we take it for lunch the next day and it’s even better the next day. Gracie has developed a good taste for this yet so I usually save her a tortilla. I spread bean dip on it and shredded cheese, microwave 10-15 seconds. Roll it up and she loves that with some rice while we enjoy the King Ranch!
King Ranch Chicken
1 pack of corn tortillas
1 can of Rotel & cream of chicken/mushroom soup
Cheddar Cheese
1-2 cups cooked chicken
tortilla chips
chili powder
